About the Role

About Us

Mad Mex (Australia) is back to its OG roots! Fighting for Flavour, Defending for Freshness, and always bringing a Por El Sabor (for the flavour) attitude to everything we do.

We’re not here to play it safe or serve bland, boring “Mexican”. We’re here to bring big, bold, unapologetically Mexican flavours to Australia and build the most loved Mexican brand in the country while we do it.

With over 75 restaurants and growing fast, we’re entering our next phase of growth, investing in our brand, story, culture and familia, and bigger, bolder ways to bring Por El Sabor to life.

About the Role

You’ll create original campaign ideas, brand assets and print-ready artwork across our restaurants, packaging, signage, merchandise and business communications. You’ll be hands-on and responsible for both the creative quality and the technical side of every job, from first concept to final approved artwork.

This is a contract role running from mid November 2026 to March 2027. There may be an opportunity to move into a full-time position after the contract, depending on business needs.

What you’ll do

  • Develop campaign concepts, master visuals and brand assets for our marketing calendar
  • Design restaurant point-of-sale, menus, signage, packaging and merchandise
  • Prepare production-ready print files and manage handovers to suppliers
  • Create templates and assets for local marketing, franchisees and business communications
  • Keep everything on-brand, accurate and approved before release
  • Maintain an organised, version-controlled asset library
  • Work closely with our Graphic Designer (Digital & Video), the marketing team and operations

What you’ll need

  • Substantial graphic design experience, with strong campaign and brand development work
  • Hands-on print production experience, including artwork prep and supplier processes
  • Advanced Illustrator, InDesign and Photoshop skills
  • Excellent organisation, accuracy and communication
  • Ability to juggle multiple deadlines and adapt quickly to changes
  • Strong written and spoken English
  • A reliable computer and internet connection
  • Food, hospitality, QSR or multi-site retail experience is a bonus

How to apply

Send your CV and a portfolio link showing work from concept through to final delivery. Please tell us what you contributed to each piece. Applications without a portfolio won’t be considered.
